Ingredients

  • 1 cup dried chickpeas
  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (400g)
  • 2 carrots, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse and drain 1 cup of chickpeas and 1 cup of lentils.
  2. Chop 1 onion and 2 cloves of garlic.
  3. In a crockpot, add chickpeas, lentils, chopped onion, garlic, 1 can chopped tomatoes, and 2 diced carrots.
  4. Pour in 4 cups of vegetable broth.
  5. Add 1 teaspoon cumin, 1 teaspoon coriander, 1 teaspoon cinnamon, salt and pepper to taste.
  6. Stir well to combine all the ingredients.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. Once cooked, stir and adjust the seasoning if needed.
  9. Serve hot, garnished with fresh parsley and a squeeze of lemon juice if desired.
