Ingredients

  • 1 can (400ml) coconut milk
  • 2 cups chicken or vegetable broth
  • 2 tablespoons red curry paste
  • 1 pound shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 cup sliced mushrooms
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 2 green onions, chopped
  • Fresh cilantro for garnish

Instructions

  1. In a crockpot, combine 1 can of coconut milk and 2 cups of chicken or vegetable broth.
  2. Add 2 tablespoons of red curry paste and stir until well mixed.
  3. Include 1 pound of peeled and deveined shrimp, 1 red bell pepper (sliced), and 1 cup of sliced mushrooms.
  4. Add 1 tablespoon of fish sauce, 1 tablespoon of lime juice, and 1 teaspoon of sugar.
