  • 1 cup barley
  • 2 cups mushrooms, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • Herbs (thyme or rosemary, optional)

Instructions

  1. Begin by rinsing 1 cup of barley under cold water and setting it aside.
  2. In your crockpot, add 2 cups of chopped mushrooms, 1 cup of diced carrots, and 1 cup of diced celery.
  3. Pour in 6 cups of vegetable broth and add the rinsed barley.
