Ingredients

  • 500g boneless chicken thighs
  • 300g sweet potatoes, diced
  • 400ml coconut milk
  • 2 tablespoons curry powder
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Salt, to taste
  • Pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Start by gathering all the ingredients to prepare for the recipe.
  2. Place the chicken pieces in the bottom of the crockpot.
  3. Add the diced sweet potatoes on top of the chicken.
  4. In a separate bowl, mix coconut milk, curry powder, garlic, ginger, salt, and pepper until well combined.
  5. Pour the coconut milk mixture over the chicken and sweet potatoes in the crockpot.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  7. Once the cooking time is up, check that the chicken is cooked through and tender.
  8. Serve hot, garnished with fresh cilantro.
