Ingredients

  • 1 cup lentils
  • 2 large carrots
  • 1 onion
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt to taste
  • 6 cups vegetable broth
  • Fresh herbs for garnish (cilantro or parsley)

Instructions

  1. Rinse 1 cup of lentils and set aside.
  2. Peel and chop 2 large carrots into small pieces.
  3. In the crockpot, add the lentils, carrots, and 1 chopped onion.
  4. Combine spices: 1 teaspoon turmeric, 1 teaspoon cumin, and salt to taste.
  5. Add the spices to the crockpot along with 6 cups of vegetable broth.
  6. Mix all ingredients well and cover the pot.
  7. Set the crockpot on low and cook for 6-8 hours, or on high for 3-4 hours.
  8. Once cooked, adjust seasoning if necessary and blend if desired for a smoother texture.
