Ingredients

  • 1 lb (450g) ground beef
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 can (400g) crushed tomatoes
  • 1 cup (240ml) beef broth
  • 1 can (400g) kidney beans, drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups (200g) macaroni noodles
  • 1 cup (100g) shredded cheese
  • Sliced jalapeños for garnish

Instructions

  1. Brown 1 lb (450g) ground beef in a skillet over medium heat, then drain excess fat.
  2. Add 1 diced onion and 2 minced garlic cloves to the skillet, cooking until the onion is translucent.
  3. Transfer the meat mixture into the crockpot.
  4. Add 1 can (400g) crushed tomatoes, 1 cup (240ml) beef broth, 1 can (400g) kidney beans (drained and rinsed), 1 tablespoon chili powder, 1 teaspoon cumin, and salt and pepper to taste. Stir to combine.
  5. Cook on low for 4 hours.
  6. After 4 hours, add 2 cups (200g) macaroni noodles and 1 cup (100g) shredded cheese to the crockpot. Mix well.
  7. Cook for an additional 30 minutes on low until the noodles are tender and the cheese is melted.
  8. Serve hot, garnished with sliced jalapeños and additional cheese if desired.
