Ingredients

  • 4 chicken breasts
  • 1 can (400g) chickpeas
  • 1 cup diced carrots
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 2 cups couscous
  • 1 handful of raisins
  • Fresh parsley for garnish

Instructions

  1. In a crockpot, combine 4 chicken breasts, 1 can (400g) of drained chickpeas, 1 cup of diced carrots, 1 teaspoon of cumin, 1 teaspoon of coriander, 1 teaspoon of cinnamon, and salt and pepper to taste.
  2. Add 4 cups of chicken broth and mix well to combine all ingredients.
  3. Cover and cook on low for 6-8 hours or on high for 4 hours.
  4. About 30 minutes before serving, prepare 2 cups of couscous according to package instructions.
  5. Once cooked, fluff the couscous and stir in a handful of raisins and chopped parsley for added flavor.
  6. Serve the Moroccan chicken atop the couscous and garnish with additional parsley.
