Ingredients

  • 900g beef chuck, cut into bite-sized pieces
  • 500g Yukon gold potatoes, diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons curry powder
  • 400ml beef broth
  • 400g canned diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Begin by cutting the beef into bite-sized pieces and seasoning with salt and pepper.
  2. In a skillet, sear the beef over medium heat until browned on all sides, about 3-5 minutes.
  3. Transfer the seared beef to the crockpot.
  4. Add diced potatoes, chopped onion, minced garlic, and curry powder into the crockpot.
