Crockpot Savory Mushroom & Feta Egg Bake

Ingredients

  • 8 large eggs
  • 200 grams of spinach, chopped
  • 150 grams of mushrooms, sliced
  • 200 grams of feta cheese, crumbled
  • Salt, to taste
  • Pepper, to taste
  • Cooking spray (for greasing)

Instructions

  1. Prepare your crockpot by greasing the inner pot with cooking spray.
  2. In a medium bowl, whisk together 8 large eggs and season with salt and pepper.
  3. Add 200 grams of crumbled feta cheese to the egg mixture and stir gently to combine.
  4. Chop 200 grams of fresh baby spinach and 150 grams of mushrooms, then layer them evenly in the crockpot.
  5. Pour the egg and feta mixture over the spinach and mushrooms in the crockpot.
  6. Cover and cook on low for 4-5 hours or until the eggs are set and cooked through.
  7. Once cooked, allow it to cool for a few minutes before slicing into squares.
  8. Garnish with fresh parsley, if desired, and serve warm.
