Ingredients

  • 900g beef, cubed
  • 200g apricots, halved
  • 100g olives, pitted
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 500ml chicken broth
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients: beef, apricots, olives, onion, garlic, ginger, cinnamon, cumin, chicken broth, honey, olive oil, salt, and pepper.
  2. In a skillet, heat olive oil over medium heat and brown the beef cubes on all sides.
  3. Transfer the browned beef to the crockpot.
  4. In the same skillet, sauté chopped onions and garlic until translucent, then add ginger and spices (cinnamon, cumin).
  5. Pour in chicken broth and honey, stirring to combine.
  6. Add the sautéed mixture to the crockpot over the beef.
  7. Add apricots and olives into the crockpot, mixing well.
  8. Season with salt and pepper according to taste.
  9. Cover and cook on low for 6-8 hours or high for 4-5 hours.
