Ingredients

  • 2 chicken breasts (about 500g)
  • 1 cup quinoa (about 170g)
  • 2 cups spinach (about 60g)
  • 1 lemon (zest and juice)
  • 2 cups chicken broth (about 480ml)
  • Salt and pepper to taste
  • 1 tablespoon dried herbs (e.g. thyme, parsley)

Instructions

  1. Season chicken breasts with salt, pepper, and your choice of dried herbs.
  2. Place quinoa at the bottom of the crockpot.
  3. Add chopped spinach and half of the lemon zest on top of the quinoa.
  4. Arrange the seasoned chicken breasts on top.
  5. Pour in chicken broth and juice from the lemon.
  6. Cover and cook on low for 4-6 hours or high for 2-3 hours.
  7. Once cooked, fluff quinoa with a fork and mix in remaining lemon zest before serving.
