Ingredients

  • 2 cans of chickpeas (400 g each)
  • 4 cups kale, chopped (about 120 g)
  • 2 cans diced tomatoes (400 g each)
  • 4 cups vegetable broth (1 liter)
  • 2 teaspoons ground cumin
  • 1 teaspoon chili flakes
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Gather all ingredients and prepare your crockpot.
  2. Rinse and drain the canned chickpeas.
  3. Chop kale into bite-sized pieces and set aside.
  4. Add chickpeas, chopped kale, and diced tomatoes to the crockpot.
  5. Sprinkle cumin and chili flakes over the mixture.
  6. Add vegetable broth and stir the mixture well to combine.
