Slow Cooker Cream-Free Cauliflower Tomato Curry

Ingredients

  • 1 medium cauliflower
  • 2 medium tomatoes
  • 1 medium onion
  • 2 cloves garlic
  • 400 ml vegetable broth
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Pepper to taste
  • 150 grams fresh baby spinach
  • Fresh cilantro for garnish

Instructions

  1. Wash and chop one medium cauliflower into bite-sized florets.
  2. Dice two medium tomatoes and set aside.
  3. Chop one medium-sized onion and two cloves of garlic finely.
  4. Add the cauliflower, tomatoes, onions, and garlic to the crockpot.
  5. Pour in 400 ml of vegetable broth and one teaspoon of turmeric powder.
  6. Season with salt and pepper to taste.
  7. Stir well and cover the crockpot.
  8. Cook on low for 6-8 hours or high for 3-4 hours.
  9. When ready, stir in 150 grams of fresh baby spinach until wilted.
  10. Serve hot garnished with fresh cilantro.
