Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 4 cups diced potatoes
  • 2 cups corn (fresh or frozen)
  • 4 cups beef broth
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • Crisp bacon bits for garnish
  • Chopped green onions for garnish

Instructions

  1. In a large crockpot, add 1 pound of ground beef and cook on sauté until browned.
  2. Drain excess fat and add chopped onions, cooking for an additional 3-4 minutes.
  3. Add 4 cups of diced potatoes, 2 cups of corn, and 4 cups of beef broth to the crockpot.
  4. Stir in 1 tablespoon of garlic powder, 1 teaspoon of paprika, and season with salt and pepper.
