Ingredients

  • 1.5kg chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, quartered
  • 2 large carrots, chopped
  • 500g baby potatoes
  • 4 garlic cloves, smashed
  • 500ml red wine
  • 250ml beef broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Start by seasoning the chuck roast generously with salt and pepper.
  2. In a skillet, heat 2 tablespoons of olive oil over medium-high heat, and sear the roast on all sides until browned.
  3. Place the seared roast in the crockpot.
