Ingredients

  • 400g broccoli florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 800ml vegetable broth
  • 200g cream cheese
  • 200g shredded cheddar cheese
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Start by washing and chopping the broccoli into small florets.
  2. In your crockpot, combine the broccoli, chopped onion, garlic, vegetable broth, and salt.
  3. Cover and cook on low for 4 hours or high for 2 hours until the broccoli is tender.
  4. Add cream cheese and shredded cheddar cheese to the crockpot.
  5. Blend the soup using an immersion blender until smooth. For a chunkier texture, blend only half the soup.
  6. Taste and adjust seasoning with additional salt and pepper as needed.
