Ingredients

  • 1 cup wild rice
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon olive oil
  • 1/2 cup toasted almonds
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Start by rinsing 1 cup of wild rice under cool water.
  2. In your crockpot, combine the rinsed wild rice, 4 cups of vegetable broth, and 1 teaspoon of salt.
  3. Chop 1 small onion and add it to the crockpot along with 2 cloves of minced garlic.
  4. Add 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, and 1 tablespoon of olive oil for added flavor.
  5. Cover the crockpot and cook on low for 4-5 hours or until the rice is tender.
  6. Once cooked, remove the lid and fluff the rice with a fork, while stirring in 1/2 cup of toasted almonds and 1/4 cup of chopped fresh parsley.
