Ingredients

  • 1 (4-5 lb) pork shoulder
  • 3 tablespoons ground coffee
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth or water
  • 1 onion, sliced
  • 4 cloves garlic, minced

Instructions

  1. Start by mixing together 3 tablespoons of ground coffee, 2 tablespoons of brown sugar, 1 tablespoon of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper in a small bowl to create the rub.
  2. Pat the pork shoulder dry with paper towels to ensure the rub adheres well.
  3. Generously coat the pork shoulder with the coffee rub, pressing it into the meat to form a crust.
  4. Place the coated pork shoulder in the slow cooker. For an extra layer of flavor, add sliced onions and minced garlic around the meat.
  5. Pour 1 cup of beef broth or water over the pork shoulder for moisture.
  6. Cover the slow cooker and cook on low for 8-10 hours or on high for 4-6 hours until the pork is fork-tender and shreds easily.
  7. Once cooked, carefully remove the pork from the slow cooker and shred it using two forks.
  8. Serve the shredded pork with your favorite sides or use it in tacos, sandwiches, or salads.
