Ingredients

  • 1 medium cauliflower, cut into florets
  • 1 can (400g) canned chickpeas, drained and rinsed
  • 1 can (400ml) coconut milk
  • 1 can (400g) diced tomatoes
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 teaspoons cumin
  • 1 teaspoon turmeric
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Gather all ingredients: cauliflower florets, canned chickpeas, coconut milk, diced tomatoes, onion, garlic, ginger, and spices.
  2. In the slow cooker, add diced onion, minced garlic, and grated ginger at the bottom.
  3. Add cauliflower florets and canned chickpeas on top of the onion mixture.
  4. Pour in the canned diced tomatoes and coconut milk, mixing gently to combine.
