Ingredients

  • 500g beef, cut into chunks
  • 300g potatoes, chopped
  • 200g carrots, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 500ml beef broth
  • 250ml red wine (optional)
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Begin by cutting 500g of beef into 2.5 cm chunks and season with salt and pepper.
  2. In a skillet, heat 2 tablespoons of olive oil and brown the beef on all sides, then transfer to the crockpot.
  3. Chop 300g of potatoes and 200g of carrots into bite-sized pieces.
  4. Add the vegetables to the crockpot along with 1 chopped onion and 2 minced garlic cloves.
  5. Pour in 500ml of beef broth and 250ml of red wine (optional) for deeper flavor.
  6. Add 1 bay leaf, 1 teaspoon of dried thyme, and salt and pepper to taste.
  7. Cover the crockpot and cook on low for 8 hours or high for 4 hours until the beef is tender.
  8. Before serving, remove the bay leaf and adjust seasoning if necessary.
  9. Serve hot with crusty bread or over rice for a hearty meal.
