Ingredients

  • 1 cup barley
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 3 cups vegetable broth
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup fresh parsley, chopped

  1. Start by rinsing 1 cup of barley under cold water to remove any debris.
  2. In a large crockpot, add the rinsed barley, 1 medium onion (diced), 2 medium carrots (sliced), and 3 cups of vegetable broth.
