Ingredients

  • 500 grams chicken breasts
  • 1 cup chopped leeks
  • 2 cups fresh spinach
  • 2 cups chopped kale
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped chives for garnish
  • Greek yogurt or sour cream (optional)

Instructions

  1. Place the chicken breasts at the bottom of your crockpot.
  2. Add chopped leeks, spinach, kale, garlic, and herbs on top of the chicken.
  3. Pour in the vegetable broth, ensuring all ingredients are submerged.
  4. Season with salt and pepper to taste. You can also add your favorite herbs.
