Ingredients

  • 1 cup pearl barley
  • 4 cups vegetable broth
  • 2 cups mixed mushrooms, sliced
  • 1/4 cup balsamic vinegar
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a crockpot, combine 1 cup pearl barley, 4 cups vegetable broth, and 2 cups mixed mushrooms, sliced.
  2. Add 1/4 cup balsamic vinegar, 2 teaspoons dried thyme, 1 teaspoon garlic powder, salt, and pepper to taste.
  3. Stir the mixture until well combined.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the barley is tender.
