Ingredients

  • 500g beef, cubed
  • 2 bell peppers, sliced (red and green)
  • 200g bamboo shoots, drained
  • 400ml coconut milk
  • 3 tablespoons red curry paste
  • A handful of fresh Thai basil leaves
  • Salt and pepper to taste

Instructions

  1. Start by placing cubed beef into the crockpot.
  2. Add sliced bell peppers and bamboo shoots on top of the beef.
  3. In a bowl, mix coconut milk with red curry paste, pouring it over the ingredients in the crockpot.
  4. Add Thai basil leaves and mix gently to combine.
  5. Season with salt and pepper to taste, then cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, gently stir to combine all ingredients before serving.
