Ingredients

  • 450 g Italian sausage, sliced
  • 400 g cannellini beans, drained and rinsed
  • 400 g diced tomatoes (canned)
  • 300 ml vegetable broth
  • 3 cloves garlic, minced
  • 150 g fresh spinach
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Begin by browning the Italian sausage in a skillet over medium heat. Drain excess fat and set aside.
  2. In the crockpot, add the cooked sausages, rinsed cannellini beans, diced tomatoes, and garlic.
  3. Pour in the vegetable broth and season with Italian herbs, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. About 30 minutes before serving, stir in the fresh spinach and let it wilt into the stew.
