Ingredients

  • 500g beef brisket
  • 6 cups water
  • 1 onion, quartered
  • 1 piece of ginger (5 cm), sliced
  • 3 star anise
  • 1 cinnamon stick
  • 2 tablespoons fish sauce
  • Salt and pepper to taste
  • 200g rice noodles
  • Fresh basil for garnish
  • Lime wedges for garnish
  • Sliced chili pepper for garnish

Instructions

  1. Start by placing the beef, water, onion, ginger, star anise, cinnamon, and fish sauce into the crockpot.
  2. Season with salt and pepper to taste.
  3. Cover and cook on low for 8 hours or on high for 4 hours.
  4. Once cooked, remove the beef, shred it, and strain the broth to remove solids.
  5. Return the broth to the crockpot and add rice noodles. Cook on high for another 20 minutes until noodles are tender.
  6. Serve the soup in bowls topped with shredded beef, fresh basil, lime wedges, and sliced chili pepper.
