Ingredients

  • 1 kg beef (chuck roast or flank steak)
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • Salt to taste
  • 400 g diced tomatoes
  • 400 g black beans (drained and rinsed)
  • 200 g corn (canned or frozen)
  • 240 ml beef broth
  • 350 g rice (uncooked)
  • 30 ml lime juice
  • 30 g fresh cilantro (chopped)
  • 100 g shredded cheese
  • 1 avocado (sliced)
  • Lime wedges for serving

Instructions

  1. Season the beef with cumin, paprika, garlic powder, and salt.
  2. Place the seasoned beef in the crockpot.
  3. Add diced tomatoes, black beans, corn, and beef broth to the pot.
  4. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  5. Prepare the cilantro lime rice: Cook rice according to package instructions, adding lime juice and chopped cilantro at the end.
  6. Once the beef is cooked, shred it with two forks.
  7. To serve, layer the rice in bowls, add the shredded beef, and top with cheese, avocado, and lime wedges.
