Ingredients

  • 1.5 kg butterflied pork loin
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1/4 cup fresh thyme, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup chicken broth or white wine

Instructions

  1. Begin by preparing your pork loin. Carefully butterfly the pork loin by slicing it lengthwise, ensuring not to cut all the way through.
  2. In a bowl, combine breadcrumbs, grated parmesan cheese, minced garlic, chopped herbs, salt, and pepper.
  3. Stuff the breadcrumb mixture into the butterflied pork loin, pressing down to ensure it is well packed.
  4. Secure the pork loin with kitchen twine or toothpicks to hold the filling in place.
  5. Heat a pan over medium heat and sear the pork loin on all sides until golden brown.
  6. Transfer the pork loin to the crockpot and add some broth or wine for moisture.
  7. Cover and cook on low for 6 to 8 hours or until the pork is cooked through and tender.
  8. Once cooked, remove the pork loin, let it rest for a few minutes, then slice and serve.
