Ingredients

  • 2 tilapia fillets (about 200g each)
  • 150g snap peas
  • 1 bell pepper, sliced
  • 200g cherry tomatoes
  • 1 lemon, sliced
  • 240ml vegetable broth
  • 1 tablespoon lemon pepper seasoning

Instructions

  1. Prepare the crockpot by lightly greasing it with cooking spray.
  2. Arrange the tilapia fillets at the bottom of the crockpot.
  3. Add snap peas, bell peppers, and cherry tomatoes around the tilapia.
  4. Slice fresh lemon and place the slices on top of the fish and vegetables.
  5. In a separate bowl, mix the broth with lemon pepper seasoning.
  6. Pour the lemon-pepper broth over the fish and vegetables.
  7. Cover and set the crockpot to cook on low for 2 to 3 hours.
