Ingredients

  • 1 kg beef chuck, cut into 1-inch cubes
  • 300 g pearl onions, peeled
  • 300 g mushrooms, sliced
  • 750 ml red wine
  • 500 ml beef broth
  • 2 tablespoons tomato paste
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: dice the beef into 1-inch cubes, slice the mushrooms, and peel the pearl onions.
  2. In a large skillet over medium heat, sear the beef cubes in batches until browned on all sides, about 5 minutes per batch. Transfer the browned beef to the crockpot.
  3. Add the pearl onions and mushrooms to the skillet and cook for about 3-4 minutes until slightly softened. Transfer them to the crockpot with the beef.
  4. Pour in the red wine, beef broth, and add the tomato paste, garlic, bay leaf, thyme, and rosemary. Stir to combine all the ingredients.
