Ingredients

  • 4 thick pork chops (about 680g)
  • 2 cups mushrooms, sliced (about 150g)
  • 1 large onion, sliced
  • 2 cups beef broth (500ml)
  • 2 tablespoons olive oil
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and pepper to taste

Instructions

  1. Season the pork chops with salt and pepper on both sides.
  2. In a skillet, heat olive oil over medium-high heat and sear the pork chops for about 3-4 minutes on each side until browned.
  3. Transfer the seared pork chops to the crockpot.
  4. In the same skillet, add sliced onions and mushrooms, and sauté until softened, about 5 minutes.
  5. Pour in the beef broth, Worcestershire sauce, and Dijon mustard, stirring to combine. Bring to a simmer and cook for 2-3 minutes.
