Ingredients

  • 1 kg pork shoulder
  • 2 oranges (juiced)
  • 1 lime (juiced)
  • 4 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tbsp olive oil
  • 400 g black beans (canned, drained and rinsed)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 onion (diced)
  • 500 ml chicken broth
  • 300 g rice
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Start by slicing the pork shoulder into bite-sized pieces and season with salt and pepper.
  2. In a bowl, mix together the juice of the oranges and lime, garlic, cumin, oregano, and olive oil to create the mojo marinade.
  3. Place the pork in the crockpot and pour the marinade over it, making sure the meat is well-coated.
  4. Add the black beans, diced bell peppers, and onion on top of the pork.
  5. Pour in the broth and give everything a gentle stir to combine.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is tender and fully cooked.
  7. 30 minutes before serving, prepare the rice according to package instructions.
