Slow Cooker Caribbean Jerk Chicken with Sweet Plantains and Coconut Rice

Ingredients

  • 500 g chicken thighs
  • 3 tbsp jerk seasoning
  • 60 ml soy sauce
  • Juice of 2 limes
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 200 g sweet plantains, sliced
  • 400 ml coconut milk
  • 200 g long grain rice

Instructions

  1. In a bowl, combine jerk seasoning, soy sauce, lime juice, garlic, and ginger. Mix well.
  2. Place chicken thighs in a ziplock bag and pour the marinade over them. Seal and refrigerate for at least 2 hours or overnight for best flavor.
  3. Prepare the coconut rice by rinsing the rice under cold water until the water runs clear. In a pot, combine rinsed rice, coconut milk, and water, bring to a boil, then reduce heat and simmer covered until cooked.
  4. In your crockpot, place the marinated chicken. Pour the remaining marinade over the chicken and add sliced sweet plantains and lime wedges.
  5. Cook on low for 6-8 hours or high for 4 hours, until the chicken is tender and fully cooked.
  6. Serve the jerk chicken hot with coconut rice on the side. Garnish with fresh herbs if desired.
