Ingredients

  • 450 grams frozen hash browns
  • 300 grams breakfast sausage, cooked and crumbled
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 225 grams mozzarella cheese, shredded
  • 6 large eggs
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Spray the inside of the crockpot with non-stick cooking spray for easy cleanup.
  2. Layer the hash browns evenly at the bottom of the crockpot.
  3. In a skillet, cook the sausage until browned and then layer it over the hash browns.
  4. Add chopped bell peppers over the sausage.
  5. Sprinkle mozzarella cheese evenly over the top.
  6. Crack the eggs gently over the mixture, ensuring they are evenly spaced.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours until eggs are set.
  8. Serve warm and garnish with chopped parsley if desired.
