Ingredients

  • 500g Andouille sausage
  • 500g chicken breasts
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 stalks celery, chopped
  • 400g diced tomatoes, canned
  • 750ml chicken broth
  • 2 tablespoons Cajun seasoning
  • 3 cloves garlic, minced
  • 2 bay leaves
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Start by preparing your ingredients: chop the onion, bell peppers, and celery.
  2. In a pan, sauté the Andouille sausage until browned, then set aside.
  3. In the crockpot, layer the chicken breasts, followed by the sautéed sausage, chopped onions, bell peppers, and celery.
  4. Add diced tomatoes, chicken broth, Cajun seasoning, garlic, and bay leaves to the crockpot.
  5. Cover and set the crockpot to low for 6-8 hours or high for 3-4 hours.
  6. With 30 minutes remaining, shred the chicken and return it to the pot.
  7. Adjust seasoning with salt and pepper to taste, and serve hot over cooked rice.
