Ingredients

  • 900g frozen shredded hashbrowns
  • 240ml sour cream
  • 120g shredded cheddar cheese
  • 300g cream of chicken soup
  • 100g crushed cornflakes
  • 60g melted butter
  • Chopped green onions or fresh herbs for garnish (optional)

Instructions

  1. In a large mixing bowl, combine 1 bag (about 900g) of frozen shredded hashbrowns, 1 cup (240ml) of sour cream, 1 cup (120g) of shredded cheddar cheese, and 1 can (300g) of cream of chicken soup.
  2. Mix well until all ingredients are combined evenly.
  3. Transfer the mixture to a greased crockpot, spreading it evenly.
  4. In a separate bowl, combine 1 cup (about 100g) of crushed cornflakes and 1/4 cup (about 60g) of melted butter.
  5. Sprinkle the cornflake mixture evenly over the top of the hashbrown mixture.
  6. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until heated through and bubbly.
  7. Once done, remove from the crockpot and let it sit for a few minutes before serving.
  8. Garnish with chopped green onions or fresh herbs if desired before serving.
