Ingredients

  • 1 cup long-grain rice
  • 4 cups coconut milk
  • 1 teaspoon chai spice mix
  • 1/2 teaspoon salt
  • 1/4 cup diced apples
  • 1/4 cup chopped pistachios (optional)
  • Yogurt for topping
  • Brown sugar for topping (optional)

Instructions

  1. Rinse 1 cup of rice under cold water until the water runs clear.
  2. In the crockpot, combine rinsed rice, 4 cups of coconut milk, 1 teaspoon of chai spice mix, and 1/2 teaspoon of salt.
  3. Add 1/4 cup of diced apples and 1/4 cup of chopped pistachios (optional) into the mixture.
  4. Stir the ingredients well to combine.
  5. Set the crockpot to low and cook for 6-8 hours, or on high for 3-4 hours.
  6. Once cooked, stir well and adjust seasoning if necessary.
