Ingredients

  • 6 English muffins, split
  • 12 slices Canadian bacon
  • 8 large eggs
  • 1 cup hollandaise sauce, prepared or homemade
  • Chopped chives for garnish
  • Butter or cooking spray for greasing

Instructions

  1. Grease the bottom of your crockpot with butter or non-stick spray.
  2. Layer half of the English muffins in the bottom of the crockpot.
  3. Top with half of the Canadian bacon slices evenly over the muffins.
  4. In a bowl, crack and gently whisk the eggs, then pour half over the muffin and bacon layers.
  5. Repeat the layering process by adding the remaining muffins, bacon, and the rest of the eggs.
