Ingredients

  • 1 kg sweet potatoes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt, to taste
  • Pepper, to taste
  • 150 ml vegetable broth
  • Fresh parsley, for garnish

Instructions

  1. Start by peeling and cubing 1 kg of sweet potatoes into uniform pieces.
  2. In a large bowl, toss the cubed sweet potatoes with 2 tablespoons of olive oil, 4 minced garlic cloves, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, salt, and pepper to taste.
  3. Transfer the sweet potato mix into the crockpot.
  4. Add 150 ml of vegetable broth to the crockpot to help with cooking.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the sweet potatoes are fork-tender.
  6. Once cooked, mix gently and garnish with fresh parsley before serving.
