Ingredients

  • 4 skinless chicken breasts (450g)
  • 200g baby bok choy
  • 4 cloves garlic, crushed
  • 2 limes, sliced
  • 500ml chicken broth
  • 2 tablespoons lime juice
  • Salt and pepper, to taste

Instructions

  1. Season the skinless chicken breasts with salt, pepper, and a bit of garlic powder.
  2. Place the chicken breasts in the crockpot.
  3. Add the baby bok choy, crushed garlic cloves, and lime slices over the chicken.
  4. Pour in the chicken broth and lime juice, making sure the chicken is mostly submerged.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
  6. Once cooked, remove the chicken and bok choy from the crockpot and let rest for a few minutes.
  7. Shred the chicken or slice it, and serve it alongside the bok choy with some of the broth drizzled over the top.
