Detoxifying Ginger Turmeric Lentil Soup in the Crockpot

Ingredients

  • 1 cup lentils
  • 1 medium onion
  • 2 tablespoons fresh ginger
  • 1 tablespoon fresh turmeric
  • 2 medium carrots
  • 1 medium bell pepper
  • 4 cups vegetable broth
  • 1 can (400ml) coconut milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon cumin
  • Juice of 1 lemon
  • Fresh cilantro for garnish
  • Lemon wedges for serving

Instructions

  1. Rinse and drain 1 cup of lentils thoroughly to remove any debris.
  2. Peel and chop 1 medium onion, then add to the crockpot.
  3. Peel and grate 2 tablespoons of fresh ginger and 1 tablespoon of fresh turmeric, then add to the crockpot.
  4. Chop 2 medium carrots and 1 medium bell pepper, then add to the mixture.
  5. Pour in 4 cups of vegetable broth and 1 can (400ml) of coconut milk.
  6. Add 1 teaspoon of salt, ½ teaspoon of black pepper, and 1 tablespoon of cumin for flavor.
  7. Cover the crockpot and set on low for 6-8 hours or high for 3-4 hours until lentils are tender.
  8. During the last 30 minutes, add the juice of 1 lemon and adjust seasonings if necessary.
  9. Serve hot, garnished with fresh cilantro and lemon wedges.
