Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons, juiced
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup uncooked rice
  • 2 cups water
  • 1 cup vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup black olives
  • 1/2 cup feta cheese, crumbled
  • Fresh herbs (such as parsley or mint) for garnish

Instructions

  1. In a bowl, combine the juice of 2 lemons, olive oil, garlic, oregano, salt, and pepper to create the marinade.
  2. Add the chicken breasts to the marinade, turning to coat them evenly, and allow them to marinate for at least 30 minutes.
