Ingredients

  • 1.5 kg lamb shoulder
  • 3 tablespoons harissa paste
  • 2 cups chickpeas, drained and rinsed
  • 2 cups diced tomatoes (canned)
  • 2 medium onions, diced
  • 4 cloves garlic, minced
  • 1 cup dried apricots, chopped
  • Salt to taste
  • Pepper to taste
  • Fresh mint for garnish

Instructions

  1. Begin by searing the lamb shoulder on all sides in a hot skillet, then transfer it to the crockpot.
