Ingredients

  • 1 cup Arborio rice
  • 1 pound ground beef
  • 4 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup cherry tomatoes, halved
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In your crockpot, combine 1 cup of arborio rice, 1 pound of ground beef, 4 cups of beef broth, and 1 can (14 oz) of diced tomatoes.
  2. Add 1 cup of cherry tomatoes, sliced in half, 1 onion, finely chopped, 2 cloves of garlic, minced, and 1 teaspoon of Italian seasoning.
  3. Stir the mixture well to combine all ingredients.
