Lemon Blueberry Quinoa Porridge

Ingredients

  • 1 cup quinoa
  • 2 cups water or almond milk
  • 1 tablespoon maple syrup
  • 1 pinch salt
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1 cup fresh blueberries

Instructions

  1. Rinse 1 cup of quinoa under cold water and drain.
  2. Add rinsed quinoa, 2 cups of water or almond milk, 1 tablespoon of maple syrup, and a pinch of salt into the crockpot.
  3. Sprinkle in the zest of one lemon and juice from half of the lemon.
  4. Stir the mixture gently to combine all ingredients.
  5. Cover the crockpot and cook on low for 4 hours or high for 2 hours.
  6. Once done, stir in 1 cup of fresh blueberries.
  7. Serve warm, garnished with additional blueberries and lemon zest if desired.
