Ingredients

  • 500 grams cod fillets
  • 2 medium carrots, chopped
  • 200 grams fresh spinach
  • 750 milliliters vegetable broth
  • 2 tablespoons fresh ginger, grated
  • Juice and zest of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Begin by preparing the ingredients: chop the carrots and rinse the spinach thoroughly.
  2. In the crockpot, add the cod fillets on the bottom.
  3. Sprinkle the chopped carrots over the cod fillets.
  4. In a bowl, combine the broth, ginger, lemon juice, and zest; mix well.
  5. Pour the broth mixture over the ingredients in the crockpot.
  6. Cover the crockpot and set it to cook on low for 4-6 hours or high for 2-3 hours.
  7. About 30 minutes before serving, add the spinach to the crockpot.
