Ingredients

  • 200 grams lentils
  • 100 grams fresh spinach
  • 1 can (400 grams) diced tomatoes
  • 1 can (400 ml) coconut milk
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tablespoons oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 500 ml vegetable broth
  • Juice of 1 lime

Instructions

  1. Rinse the lentils under cold water and set them aside.
  2. In the crockpot, add lentils, chopped spinach, diced tomatoes, and coconut milk.
  3. In a pan, heat oil and sauté onions, garlic, and ginger until soft.
  4. Stir in the spices (cumin, coriander, turmeric, and chili powder) and cook for another minute.
  5. Add the sautéed mixture to the crockpot and mix well.
  6. Pour vegetable broth over the mixture and stir.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. Before serving, stir in fresh lime juice and adjust seasoning as needed.
