Ingredients

  • 4 medium-sized potatoes (about 600g)
  • 1 medium onion, chopped (about 150g)
  • 2 cloves of garlic, minced
  • 4 cups (960ml) chicken or vegetable broth
  • 200g cream cheese
  • 200g grated cheddar cheese
  • 150g cooked bacon, diced
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Start by washing and peeling the potatoes, then chop them into small cubes.
  2. In a large crockpot, combine the potato cubes, chopped onion, garlic, and broth.
  3. Season with salt, pepper, and any desired spices. Stir well.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
  5. Once cooked, use a masher or immersion blender to achieve your desired soup consistency.
  6. Add cream cheese, grated cheddar, and half of the bacon. Stir to combine.
