Ingredients

  • 1 large head of cauliflower
  • 1 cup vegetable broth
  • 1/2 cup cream cheese
  • 1/2 cup shredded cheddar cheese
  • Salt to taste
  • Pepper to taste
  • Chopped chives for garnish
  • Crispy bacon, crumbled for topping

Instructions

  1. Wash and chop 1 large head of cauliflower into florets.
  2. Add the cauliflower florets to the crockpot.
  3. Pour 1 cup of vegetable broth over the cauliflower.
  4. Cover and cook on low for 4 hours or high for 2 hours until tender.
  5. Once cooked, drain any excess liquid.
  6. Add 1/2 cup of cream cheese, 1/2 cup of shredded cheddar cheese, and salt and pepper to taste.
  7. Using an immersion blender, blend until smooth and creamy.
  8. Top with chopped chives and crumbled bacon for garnish before serving.
