Ingredients

  • 1 cup lentils
  • 1 cup cherry tomatoes, halved
  • 1 cup black olives, sliced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse and drain 1 cup of lentils under cold water.
  2. In the crockpot, combine the lentils, 1 cup of halved cherry tomatoes, and 1 cup of sliced black olives.
  3. Add 2 tablespoons of olive oil, 2 cups of vegetable broth, 1 teaspoon of dried oregano, and salt and pepper to taste.
  4. Stir the ingredients together until well mixed.
  5. Cover and set the crockpot on low for 6-8 hours, or high for 3-4 hours.
  6. Once cooked, taste and adjust seasoning as necessary.
